Black Dragon Tea Bar: Featured Tea Blog

It has been some time since I featured a tea blog. Today's featured blog is Black Dragon Tea Bar, a Seattle-based blog run by Brett Boynton, who, together with Virginia Wright, or Cinnabar, of Gongfu Girl, runs the small tea company Phoenix Tea.

The name of this blog is a clear reference to Oolong tea, Chinese 烏龍茶 or 乌龙茶, Pinyin wūlóng chá, which is literally translated as "Black Dragon Tea". The blog does have a lot of material on oolongs, but it is much broader.


What do I like about this blog?


  • Breadth and diversity of topics - There are surprisingly many tea blogs written by people with a lot of deep knowledge and experience with tea and Chinese tea culture. What makes this particular blog stand out is its breadth, focusing at times on the tea itself, on the process of drinking it, but on other times covering tea production, or even tangential topics like tea seed oil (not the same as tea tree oil; this one is actually made from the tea plant).
  • First-hand accounts from regions of tea productions - Brett Travels to regions of tea production, particularly, Taiwan. Not only are the direct travel accounts interesting on their own, but the fact that Brett travels makes me more likely to trust his knowledge of tea production and the teas themselves, especially from the regions in which he has traveled.
  • Brett is clearly an experimenter - I noticed this pretty quickly when I started reading this blog, and it is one of the aspects of the blog that keeps me seriously engaged with it. A couple recent examples of Brett's experimenting include a side-by-side cupping of broken-leaf Wenshan Baozhong, and a roasting experiment involving 2006 rou gui oolong. I love both the desire to experiment with elements of tea production or aging like roasting, and the practice of side-by-side comparisons, which allow for more objective gathering of information than comparing teas to memory.
  • Brett is a gardener and writes about it - Not only does Brett garden, he grows the tea plant in Seattle, and he also shares interesting tidbits from his other gardening adventures on his blog. And like me, he gets excited when vegetables overwinter in his garden! I especially recommend reading Brett's accounts of growing the tea plant, such as this may 2009 report explaining something about production and the more recent July 2012 report of an attempt at making oolong. Yet another thing I love about this blog!

Urban herbs:

One last thing I want to draw attention to about this blog is the Urban Herbs series, which relates both to Brett's broad interest in plants and gardening, and experience of tea and herbal infusions. Brett has set out to locate various herbs growing wild in the urban environment, and steep them as herbal teas.

I find this fascinating, both because I also share a desire to steep and drink infusions of various herbs other than the tea plant, and experience them with a richness similar to that of tea itself, and also because I love experiencing wild-harvested food and herbs, as I find it helps one to learn more about and become more connected to the local ecosystems.

Nitrogen Fixing Plants to Fertilize Tea Organically

Recently, Brett of Black Dragon Tea Bar shared a post, titled Organic Tea in Mucha, sharing details of his visit in January of 2010 to a region, Mucha(木柵), in northern Taiwan. If you scroll down through the photos, you will see something that I found very interesting, a photo of a nitrogen fixing cover crop planted in between rows of tea plants. In this post, I want to explain why this practice is used, and how it can be beneficial in terms of reducing the environmental impact of tea production.

Most of us are familiar with a number of nitrogen-fixing plants. Most Americans are familiar with clover, which grows in lawns throughout much of North America:


The above photo shows red clover (center, with the larger, more oblong leaves), and white clover (the smaller leaves around the edge, with a rounder shape). Both of these two species are native to Europe, and not to North America, but have become widely naturalized in North America, especially white clover in grassy lawns.

Here is another nitrogen fixing plant, beans:


These are fava beans. Clover, beans, and the nitrogen fixing plants planted in between the rows of tea plants in Brett's original post, are all legumes. Legumes are a plant family that have the remarkable ability to "fix" atmospheric nitrogen into a form able to be utilized by plants. A few other plants, such as Alders and Bayberries, can also do this, but legumes are the most commercially important and also the most widespread in most ecosystems.

Why is nitrogen fixation such a big deal?

Nitrogen is one of the major chemical elements used in life; proteins, the basic building blocks of life forms, including both plants an animals, are rich in nitrogen. Nitrogen is a very common element; nitrogen gas makes up about 80% of the Earth's atmosphere. Yet in many ecosystems, and in much commercial agriculture (including much tea cultivation), plant growth is limited by available nitrogen. Why?

The answer lies in the electron structure of nitrogen atoms, and the corresponding molecular structure of nitrogen gas, depicted here in this molecular diagram:


Nitrogen has an electron structure which is three electrons away from a stable state, unlike Oxygen, which only is two electrons away. Nitrogen atoms thus achieve a more stable state by pairing up, and "sharing" electrons. This setup forms what can be viewed as a "triple bond", pictured by the triple line between the two atoms in the diagram above. This bond is very hard to break, and the state of nitrogen gas is very stable. The oxygen molecule only has a double bond, which is easier to break. Oxygen gas is thus much less stable, which is why things burn--combustion is just a chemical reaction with the oxygen in air.

Getting nitrogen into a form that can be used by living things like plants and animals, to build complex organic molecules, is somewhat of a big deal. Most life forms cannot do this. Legumes do not even do it on their own; they do so by having special nodules on their roots, which contain anaerobic bacteria (bacteria that function in an oxygen-free environment), which do the work for them.

Nitrogen and tea:

The tea plant, like most plants, cannot fix its own nitrogen. Thus, when tea leaves are continuously harvested, nitrogen is continually removed from the system consisting of the tea plants and soil in which the tea is growing. This nitrogen must be replaced, or else the tea plant will eventually start exhibiting stunted growth and stop being productive.

There are several different ways of achieving this:

  • Application of organic fertilizer, such as soil or mulch derived from compost, manure, mulched wood, or other organic sources.
  • Synthetic or mineral-based fertilizers, such as ammonia fertilizers (in which atmospheric nitrogen is converted in an industrial process into a form that can be absorbed by plants), or nitrate-based fertilizers (which can be synthetic or naturally-occurring minerals).
  • Growing the tea plant together with nitrogen-fixing plants, such as the example given in the Black Dragon Tea Bar blog post Organic Tea in Mucha.
  • Rotating crops from year to year, such as growing beans and corn in alternate years, or growing other nitrogen-fixing annual crops alternately with crops with a higher nitrogen requirement. This approach does not work with tea cultivation because the tea plant is a perennial plant and requires multiple years to reach commercially viable production.

Nitrogen-fixing plants can be highly effective at adding nitrogen to agricultural ecosystems. Because these plants have access to an effectively infinite amount of nitrogen (far more than they themselves need), these plants tend to "bleed nitrogen" out into the surrounding ecosystem, through their roots. The plants also have leaves and stems that are extremely high in nitrogen. Nitrogen-rich leaves tend to be more delicate in texture and break down more rapidly than carbon-rich leaves (the leaves of the tea plant, by contrast, tend to contain much less nitrogen than most legumes), so the nitrogen used by these plants tends not to stay tied up in the plant itself very long.

Nitrogen-fixing plants do not solve all a plant's nutrient needs. Plants, including tea, also require phosphorus and numerous trace minerals for healthy growth, so nitrogen-fixing plants cannot completely eliminate the need for the application of fertilizers. But they can greatly reduce it.

Another benefit of nitrogen fixing plants over synthetic fertilizers is that the way that the nitrogen enters the system, when provided by nitrogen-fixing plants, tends to be more beneficial to the overall ecosystem. When applying synthetic fertilizers, like ammonium nitrate based fertilizers, a lot of the nitrogen simply runs off into the water, which can create nutrient pollution downstream. Nitrogen fixing plants put the nitrogen directly into the soil and the leaf litter, gradually over time, so they can provide the same benefits to the crops being grown while greatly reducing nutrient pollution downstream.

British Oppression: Top 5 Google Searches

When Americans think of tea, many of us think of the British. Nowadays, Americans are more likely to picture the British as pleasant, tea-drinking people, less so in the role of heinous oppressors, imperialists and colonialists. The attitude has shifted quite a ways from the days of the American revolutionary war, in which the United States achieved independence from Great Britain. In contrast to the pre-revolutionary colonies, where the British were seen largely as extracting wealth from the colonies without giving back proportionate value or influence (taxation without representation), the British have more recently been seen as equals and allies.

The history of oppression, imperialism, and colonialism by the British, however, is more recent in some other countries.

Look at the following Google search, which shows Google's top five auto-complete suggestions when typing in British Oppression In:


These suggestions reflect the terms that are most likely typed into the search box.

I find it interesting that the top two results are both major tea-producing countries. This is no coincidence. The British were responsible for introducing large-scale tea production to both India and Kenya. Kenya only achieved independence from Britain in 1963, and India in 1947. It is also no coincidence that the third country, Ireland, is a major tea-drinking country, as the British introduced tea to the Irish.

The legacy of British Colonialism in the tea industry:

The large-scale production of tea in India primarily served British interests, specifically, that of the East India Company. In most cases, freedom from oppression does not come in one step, but rather, is a continuous process. Recall how when slavery was abolished in the U.S., the system of sharecropping and Jim Crow laws still left southern blacks in a position of little power and autonomy relative to whites. Unfortunately, there are economic analogues to this process, not only in the tea industry, but in the economic relationship in general between wealthy Western countries and the countries which had been colonized by them.


It is easy to forget that our society has come a long way, even in relatively recent years. This photo was taken in 1940.

One topic that I have been increasingly thinking and writing about lately is the way, in the tea industry, profits tend to be greatest in the wealthy Western countries, and the share of the final price of a product that reaches the original producers (in countries like Kenya and India) is very small relative to the share that is taken by blenders, packers, and tea marketers in wealthy countries. A report that explores this in more depth is Sustainability Issues in the Tea Sector. This is one reason I both support the goals behind fair trade tea, and think it is important to criticize the fair trade movement to ensure that it is actually achieving what it sets out to do.

Let us be mindful of these issues:

I would like to call people to be aware of these issues, both when buying tea and when selling tea. Thankfully, we are past the days of overt forms of discrimination like Jim Crow laws or colonialism and imperialism, but subtle forms of exploitation persist. The global economic system extracts wealth from poorer regions and keeps the wealth concentrated in already wealthy regions, and, what is perhaps most heinous, it does so in such a way that is largely hidden from the view of not only the typical tea drinker, but many businesses and industry insiders as well.

I think awareness of these issues, and a push for greater transparency in the tea industry, and the economic system in general, is a good first step to take. In the end, I would like us to imagine and bring into being a way of living and doing business which is based on the idea that all people are valuable, and which rewards people equally for equal work, and does not give the people in any one country a disproportionate amount of power or influence in the global economic system.

Fair Trade and the Tea Industry on Journey for Fair Trade

I recently shared a guest post with the blog Journey for Fair Trade. Journey for Fair Trade is a blog, run by Mitch Teberg, focusing on fair trade. Mitch is currently working with the United Nations Development Program, and recently moved from Vietnam to Afghanistan.



One thing I really like about this blog is that Mitch Teberg is looking to promote fair trade, but he also examines the fair trade organizations with a critical eye, and looks to give as much of a voice as possible to the producers of the products which are imported to the U.S. and other Western countries with fair trade certification labels. The blog often goes into considerable depth about potential criticisms of fair trade, and in one case, even organized some activism surrounding a fabricated news article about fair trade producers and child labor. I also like the way the blog integrates discussion of other sustainability-related issues, as I think fair trade is not just about wages or working conditions, but is also about long-term health and environmental issues in the communities producing the goods imported to the Western world.

If you're interested in reading a blog that is focused on fair trade, and that addresses all types of producers, broader than just tea, and broader than just agriculture in general, you may find this blog very interesting. Updates are relatively infrequent, but posts are quite deep.

The Oxidation of Tea And Classifying Tea As Black, Green, Oolong, Etc.

When I first got into tea, my level of knowledge was a lot more basic than it is now. I had heard the standard adage "black tea is fully oxidized" and its counterpart "green tea is unoxidized". I initially thought that the different classes of tea (black, green, oolong, etc.) were characterized or defined by their levels of oxidation. I was surprised when I found teas that seemed to be exceptions to this pattern. What I found when researching more deeply was that differing levels of oxidation alone does not define or separate the different classes of tea, and that these classes are usually defined by the production process as a whole, which usually, but not always corresponds to certain differences in levels of oxidation.

Reflecting on these exceptions, and wanting to create a better resource on the topic of tea and oxidation, I recently published a new article on RateTea about the oxidation of tea, in which I go into more depth about the level of oxidation among the various tea types.

In this post though, I want to delve more into some of the specific teas that inspired me to think in more nuanced ways about oxidation, and ultimately led to that article.

Very green black tea: Darjeeling first flush:

Darjeeling is a black tea, but it often is not fully oxidized. In some cases, it is as green in color (both of leaf and brewed cup) as a number of green teas. Look at the following examples:



Pictured here are, the first two from Upton Tea Imports, Arya Estate First Flush SFTGFOP1, and Thurbo Estate TGBOP Cl/Tip First Flush, then Makaibari Estate Darjeeling 1st Flush from Arbor Teas, and last, Adagio's Darjeeling #1. I featured these teas mainly because of their visual characteristics, although I will say that I've tried the first three and they're all delicious, and they all have a greener character when brewed. The greenest character in a tea presented as a "black tea", however, was, also from Upton, Castleton Estate TGBOP Ch. First Flush; this tea produced a cup lighter in color than a typical Chinese pan-fired green tea, and barely resembled black tea at all, with a very light character and tones of mint.

Very dark green tea:

Although there are plenty of green teas that are more moderate in their color, truly dark green teas, I have found, are rarer than "black" teas which exhibit a highly green character. One particular example stands out, a large-leaf green tea, produced in Thailand from the Assamica cultivar, which I purchased from Upton tea. Here are Upton's pictures of the leaf:



As you can see in the photo, which accurately depicted the tea as I sampled it, this tea was much browner than green in color. You can read my review of this tea for more about my experience with this tea.

The color of the brewed cup was also quite dark, closer to a typical black tea than other green teas. However, there was little about this tea's flavor, aroma, or other characteristics that resembled black tea in any way. I don't have a way of objectively measuring the oxidation level of teas. I wonder if the dark color of this tea were due to oxidation, or were just due to other factors. I honestly don't know what to expect about a tea like this.

Dark white teas:

Darker white teas, like shou mei and bai mu dan (white peony), are fascinating to me because they create problems for some of the older definitions of white tea, as I explore in my post definitions of white tea: raising eyebrows.

But I have found that learning about these white teas has also taught me a lot about the role oxidation plays in tea production, and the way varying production processes impact tea's characteristics through halting or allowing oxidation. For example, the fact that white tea's production does not denature the enzymes responsible for oxidation in the way that the heating does in the case of green tea, enables white tea to oxidize more than green tea, but because the leaves are quickly dried, this process is not allowed to carry out completely. But because larger leaves contain more moisture, the larger-leaf teas oxidize more. This phenomenon also explains why certain teas like moonlight white exhibit a lighter color in years of drought: when the leaves are dry, they dry out completely more quickly during production, thus allowing for less oxidation.

Why "Styles of Tea"? And Another Thank You

Yesterday we published a new page on RateTea titled Why Style? What Exactly Is A Style Of Tea?. Lately I've published a ton of new articles on RateTea, and I think they are all quite good, but this one in particular I would like to encourage people to read it. I use the phrase styles of tea frequently on this blog as well as on RateTea. As the article explains, I have some very carefully thought out reasons for the use of this term, a term which is not a universally accepted standard within the tea industry (although a number of companies and bloggers do use it, sometimes in different ways).



The above picture illustrates what I think of as different "styles of tea"; p.s. exactly two of these are not tea...can you tell which two?

I also want to give yet another thank-you to Tony Gebely of World of Tea and Chicago Tea Garden for this one; although I had reasoned through my choice of the word style long before I began talking to Tony about the matter, it was a series of conversations I had with Tony that helped me to more clearly articulate exactly why I like using this term, and that made me decide it was worth writing about this choice.

Leaves and Water: It's Not What But Where, and Nutrient Pollution in the Tea Industry

One way of looking at tea is that it just leaves and water. Here is a photo I took in Philadelphia, which shows leaves and water:



There's really not much here that looks like tea. Occasionally, fallen autumn leaves will "infuse" in streams or standing water, producing a rich dark brown infusion which looks a lot like black tea. But this is not happening in this photo, which shows freshly fallen rain.

Furthermore, most of us would probably agree that tea is generally a good thing, yet in this photo, neither the leaves nor the water are in a place that is terribly convenient. The water has flooded the entrance of a driveway, and the leaves are covering the sidewalk, and are slippery.

It's not what, but where, that matters:

Sometimes, in life, we just don't have enough of a certain resource in order to achieve some sort of goal. People go hungry for lack of food, or businesses can be limited by availability of some supply or raw ingredient in their production process. There is often no other way to remedy these sorts of problems other than finding whatever resource is needed.

In our modern society, most problems are of a different nature. Things are in the wrong place. These sorts of situations are often able to be solved in ways that turn them into a win-win situation, in which a problem in one area becomes a valuable resource in another. A good example of such a solution is recycling, which can turn waste (which is costly to dispose) into raw materials or inputs in an industrial process to create something of value.

Another good example of a problem of things being in the wrong place is nutrient pollution. Nutrients, such as nitrogen and phosphorus, are often limiting factors in both ecosystem growth and agricultural productivity. For this reason, commercial agriculture often treats crops with synthetic fertilizers, rich in nitrogen. These fertilizers are often applied liberally, providing far more nitrogen than is actually necessary for the crops. In the case of some plants or crops, excess nitrogen can be taken up by the plants in the form of nitrates and nitrites, which are harmful to eat in quantity (think of the issues associated with eating too many nitrite-treated meats). The remainder is not utilized by the plants, but runs off into the water. Once the nitrogen is in the water, it can damage or destroy aquatic ecosystems through a process called eutrophication. Eutrophication is a major problem worldwide, on all continents, and affects roughly half of lakes throughout North America, Asia, Europe, and South America (less in Africa, because Africa is less developed). Other problems include soil acidification, and contamination of the water supply with nitrates.

Over-fertilization in Tea Production:

The over-use of fertilizer is unfortunately a problem that exists in the tea industry.

The tea plant is a plant with very low nutrient requirements (think of how it grows naturally on rocky outcroppings in the Wuyi mountains), but it is an evergreen plant that naturally invests in its leaves for several year's worth of use. The continuous harvesting of leaves puts a heavier demand for nutrients on the plant, so it becomes necessary to add some form of fertilizer to replenish these nutrients.

Organic agriculture sometimes helps, but organic certification alone is not necessarily a guarantee that the right level of fertilizer is being applied. (see this source) The key solution to the problem of over-fertilization is to apply less fertilizer. Organic fertilizer still contains nutrients, and still causes problems when there are too many nutrients.

Fortunately, there are relatively easy ways for these problems to be addressed. Furthermore, as is usually the case of problems caused by things being in the wrong place, the outcome is actually a win-win situation. One solution is to use lime fertilization instead of conventional fertilization schemes. Another is to simply use less total nitrogen. There is some evidence that using less nitrogen actually results in slightly higher yields of tea. See this source for a study of Japanese tea fields, backing up these ideas.

I am hopeful that over time, we eventually completely solve not only the problem of nutrient pollution, but all other problems of things being in the wrong place. In the case of nutrient pollution, the solution is already known, it just needs to be implemented. For more problems in our world, we need more brainstorming, experimentation, and study. But I find it empowering to think about things in this way.

Makaibari Estate - My Favorite Darjeeling Estate

I was inspired to write this post by a review I read on Sarah's blog Latte Tea Dah: I Now Dream of Darjeeling: Makaibari 2nd Flush Organic .

A couple years ago, I had sampled a few single-estate Darjeeling teas, but the prospect of being able to have opinions on individual estates was still way out of grasp, something that I could perhaps imagine others doing, but was nowhere near doing myself.

I still don't have many opinions, as there are a large number of estates that I've tried only one or two teas from, and many I have yet to try any teas from. But I do now have a favorite tea estate, and that is Makaibari estate. Furthermore, the Makaibari tea estate has an official website:



It's worth visiting the website, which has more information about the estate, including the garden's commitment to sustainability and ecological principles, and a photo gallery. You can also buy some tea directly through the website. It is rather unusual for individual tea gardens to have websites, and Makaibari is one of only a few that have extensive websites.

Discussion on the "best" Darjeeling estate:

I really don't like the word "best", but I want to point out that there was a discussion over 4 years ago on teachat, best darjeeling estate?, and of the four replies that name gardens, all four name Makaibari. Other gardens named are Castleton, Jungpana, and Arya. I haven't tried Jungpana but I will say, of these, I've tried enough teas to say that I like Makaibari the best of the others mentioned, simply because I've tried teas from Castleton and Arya estates that I was less a fan of.

Makaibari's teas are pretty diverse. I find them to tend on the lighter side, but still have some bite to them. One of my favorite teas ever was a long-leaf green tea produced by Makaibari estate. I also love their first-flush, and have had very good blended tea (blends of different flushes) from this estate, sold by the Hampstead tea brand. With each of their teas, I have been impressed by the complexity of its aroma. Their are two reviews, including mine, of their first flush as sold by Arbor Teas, on RateTea if you want to get an idea of what these teas are like.

Sustainability, Organics, and Biodynamic Agriculture:

Makaibari estate also stands out from the other tea gardens, not only in Darjeeling, but around the world, as it has been a leader in sustainable agricultural practices. Makaibari was one of the first organic tea operations, and also practices biodynamic agriculture, which goes above and beyond organic certification. Both the organic and biodynamic practices have been in place since 1991, but the history of conscious sustainability-promoting decisions goes back to long before the word "sustainability" entered the mainstream: in 1971 the garden shifted over to a permaculture-based system. There's a great Wikipedia page on permaculture: it's an ancient approach to both human settlements and agriculture that emphasizes stability and long-term prosperity, using awareness of ecological principles, and it's an approach that I support wholeheartedly. You can read a bit more information on TransFair's page on Makaibari estate...which also leads into one more remark: Makaibari estate also produces fair-trade certified tea.

I find it interesting that I first got interested in this estate because I liked the way its teas tasted so much, but then came to learn that it is doing all these fantastic things that are in line with my values and goals in life.

Definitions of White Tea: Raising Eyebrows

This post was inspired by a series of conversations that I had with Tony Gebely of Chicago Tea Garden and World of Tea.

Perhaps this is the mathematician in me speaking, but I believe definitions are important. Without clear, agreed-upon definitions, dialogues, conversations, buying and selling, advertisement, and a variety of other business activities and everyday activities can become problematic. In some cases, such as in the case of white tea, definitions are not straightforward.

Definitions for a class of objects become problematic not in "typical" examples of their class, but in the atypical ones. One such problematic tea is pictured here:



This is shou mei(寿眉, longevity eyebrows) tea, purchased from Ten Ren tea. I chose this particular batch of shou mei to picture because it is the darkest in color that I have ever sampled. It looks like it may be closer to gong mei (tribute eyebrows), an even darker tea that is similar in style, and rarely available in the U.S. as it is considered low-grade.

The aroma of the dry leaf of this tea is suggestive of autumn leaves, so much so that it reminds me of playing in leaf piles in fall as a child. When brewed, this aroma becomes even stronger, and it has a dark brown color, a rich, caramel-like sweetness, and an almost tannic sort of astringency. In overall character, it is a lot more like a darker oolong than most white teas, but it shares many qualities of aroma in common with white teas; lighter shou mei can be very similar to darker examples of white peony / bai mu dan.

Is shou mei a white tea?

In order to keep this post as objective as possible, I have so far avoided the claim that shou mei "is" a white tea. Some individuals, tea companies, and other sources classify it as a white tea, but there are definitions floating around, such as two I reference below, under which it would not be classified as a white tea. However, I want to start by noting an observation: I have never seen any company selling shou mei tea and classifying it as anything other than a white tea. The companies which use definitions of white tea that would exclude shou mei do not sell shou mei. If you know of an exception to this rule, let me know, but I could not find one.

This observation certainly raises eyebrows.

Now, let's explore a couple authoritative sources who would not classify shou mei as a white tea:

Tea Association of the USA:

The Tea Association of the USA defines a number of tea-related terms in their Glossary of Terms: Industry Definitions. Although not the be-all and end-all tea authority, this organization's official definition definitely carries some degree of weight. Their definition of white tea is as follows:

Proposed New Definition
The Tea Association of the USA has proposed a new definition.
In order for White Tea to be so termed it should be:
  • Processed in accordance with the strict harvesting and processing guidelines originally established in Fujian Province, China
  • Made from finely plucked tender shoots (buds) of Camellia sinensis, which are fired or steamed and then dried.
  • There should be no withering, fermentation (oxidation) or rolling of the buds.
  • The liquor of White Tea is very pale yellow in color, and mild tasting in the cup.


Now, I am going to shift to my own subjective opinions. I do not like this definition. I think it is problematic for several reasons. There is one glaring inconsistency which I point out below, but this can be easily fixed or set aside separate from the rest of the points. Besides this, the main reason I object to this definition is that I see it as too narrow, leaving many teas, including traditional Chinese white teas like shou mei, such that they could not be included in this definition.

Here are some things I dislike about this definition:

  • "strict harvesting and processing guidelines" -- why give one particular method of producing tea preference over others? This comes across as possibly stifling innovation by labelling experimental processing methods as "not true white tea". I want to encourage and promote diversity in tea culture, traditions, and production, which includes both the embracing of diverse traditions, as well as the facilitation of developing new traditions. This aspect of the definition has the opposite effect.
  • The definition refers to the liquor of the cup and the flavor...which are highly variable, depend on brewing methods, and are to some degree subjective, and the definition given is very constraining. Even white peony or bai mu dan, which nearly everyone agrees is a white tea, has a widely variable color and flavor. I think that in general, a good definition for a broad class of teas (like white tea, black tea, green tea, etc.) does not refer to color or flavor at all.
  • This definition is internally inconsistent, depending on how you interpret words..."no withering" and "no oxidation" would actually exclude all white teas. In most usage that I've seen, "withering" refers to the normal drying process used to produce all white tea. And all white teas, including silver needle, are a tiny bit more oxidized than green teas, because they are allowed to dry naturally rather than being heated to stop all oxidation, as green teas are. This is why green teas have a more vibrant green color than white teas. The definition refers to white teas being "fired or steamed and then dried", but this specification sounds more like the processing of green tea, and this part of the definition would include green teas made from tips or leaf buds.
  • (This is my biggest criticism of the definition) The "plucked tender shoots (buds)" part of the definition would leave a number of teas, such as shou mei, without a clear way of being classified as any type of tea other than just "tea".

I'm not even a member of this Tea Association, and I have no standing or authority to do so, but I vote no on this definition! Send it back to the drawing board and come back with a new definition!

Harney and Sons Guide to Tea:

Another source that carries some degree of authority is the Harney and Sons Guide to Tea; written by Michael Harney (of Harney and Sons), a major and well-respected figure in the tea community. This book has a wealth of information about tea, is well-written, and is accessible to newcomers in the tea world. How does this book define white tea? Although the book does not set out a clear definition of white tea in one place, the book talks as if there is a well-accepted definition, and from various quotes we can piece together what this definition might be. Both of these quotes are from page 19 of the book:

White tea buds are plucked and "withered" or "air dried"...

Consisting only of buds, white teas...


This remark seems to be going even further down the line of the "white tea must consist of tender shoot and leaf buds" definition that I have seen in a number of sources. "Consisting only of buds" would exclude certain teas that nearly everyone would agree is a white tea, including white peony / bai mu dan. In fact, this fact highlights an inconsistency in this book, for later, Michael Harney goes on to write a section on mai mu dan, in which he unambiguously writes from a place that Bai Mu Tan is a white tea, yet he acknowledges (p, 28):

...Bai Mu Dan also includes some mature tea leaves.


To be more accurate, there are some white teas, such as silver needle, which consist only of buds, just as there are some black teas, like Yunnan Golden Buds (dianhong jinya/滇紅金芽) which do as well. But this attribute does not define or characterize white teas as a whole.

Perhaps I am an odd sort of person, having studied so much mathematics that I want things to be logically consistent. But I do care about consistency, and I would like to encourage as many people as possible to question their definitions, and embrace definitions that do not have these sorts of problems. Perhaps the problem with Michael Harney's book is that it never clearly defines white tea, because I suspect, given Michael Harney's level of knowledge, that if he sat down and thought about this matter, he would be able to come up with a definition that did not have any of these contradictions or drawbacks.

How to define classes of teas?

So I don't claim to have all the answers, but I personally believe that a good definition for a class of tea (black, green, white, oolong, yellow, etc.) is:
  • Consistent.
  • Simple.
  • Based on production process, not particular cultivar, not appearance or color of the cup or leaf, and certainly not flavor.
  • General or flexible enough to encompass diverse traditions, to encourage innovation within the category (including styles of white tea that may not have been invented yet), and to leave out as few "problem teas" as possible.


I'm not proposing any definitions here. You can read what I have on RateTea's page on white tea. I don't claim to like my own definition; if you check the site frequently, you'll know that that page has changed and evolved as I've researched this topic. I even go back and forth on some teas...is Xue Ya (Snow Buds) a white tea or green tea? What about moonlight white (which I've seen classified as a white tea, black tea, green tea, or Pu-erh). But one thing is for sure...shou mei is a white tea, in my world.

Back to shou mei:

Why do I think this tea, so dark in color, is a white tea? The simple answer is that the production process is more similar to other white teas than to anything else: the leaves are plucked, allowed to wither naturally, and dried. There is a clear continuum of flavor and aroma from shou mei to bai mu dan to bai hao yinzhen (silver needle) and, at least to my palate, it is clear that these teas belong to the same class.

Perhaps a stronger argument is that classifying shou mei in any other category becomes more problematic. It's clearly not a black tea, there is no bruising and full oxidation process, even though it is more oxidized, and although it's dark in color, it does not remotely resemble any black teas in aroma. It also does not closely resemble green tea...it's not immediately heated the way green teas are, and it tends to retain no more green color than other white teas, and its aroma and flavor have almost none of the characteristic qualities of typical green teas. It's oolong-like in character, and shares the partial-oxidation with these teas, but there is little else that that would qualify it as an oolong. If forced into one of these categories, I can see it being treated as a green tea or oolong tea, but I think most people would agree that this wasn't a very accurate classification.

And because shou mei is not made primarily out of tips or leaf buds, a definition of white tea cannot be limited to "tippy" teas.

I would encourage you to propose your own definition of white tea. I don't really know how to define it, and I'd like to refine and improve on the definition I have on RateTea. The purpose of this post is mainly to step on some toes and provoke some discussion, but also to invite criticism of my own definitions and articles with the goal of refining my own definitions.

Tea as Slow Food: Fast Tea vs Slow Tea

Today I want to write about a social movement that, in my opinion, is directly related to the world of tea. This is the slow food movement. Slow food is a broad and far-reaching concept; it can be seen as an opposite or alternative to "fast food". The idea of slow food is to preserve and create new traditional local and regional cuisines, to enjoy food together with people, and to become more aware of where our food comes from. By promoting local food cultures, the movement encourages diversity, and by promoting local foods and raising awareness of how food is produced, the movement promotes sustainability. The huge number of tags I've classified this post with demonstrates that this movement is related to many different facets of the things I care about.

Wikipedia has a great article about slow food, which I would recommend at least glancing at. If you want official information from the movement itself, you can visit the websites of Slow Food International or Slow Food USA. The slow food movement is something I strongly support, so I would urge you to check it out, and give some thought to what it advocates, beyond just reading this post.

How does slow food relate to tea?

Tea, like any food or beverage, can be viewed (and produced/consumed) in any number of different ways. Virtually everything about the slow food movement can be applied to tea, except possibly the "buy local" part (although one can still buy or grow local herbs for use in herbal teas, and one can certainly support local tea shops and tea houses). Using the concept of "fast food vs. slow food" as a continuum, we have two different "ends of the spectrum" so to speak.

Tea as fast food: "fast tea":

The ultimate manifestation of tea as fast food is ready-to-drink tea, which includes both bottled tea and tea in cans and other types of containers. This tea is brewed in a factory, packaged, and sold as-is. Ready-to-drink tea is fast food, in that it is quick and easy to purchase and then immediately drink, and that it is primarily an industrial product, produced in a factory, with minimal preparation on behalf of the person consuming it.

Tea as slow food: "slow tea":

At the opposing, "slowest" end of the spectrum, would be single-estate, single-harvest whole-leaf teas, processed by traditional methods, and brewed traditionally in loose-leaf form. Tea traditions are diverse, so I will not claim that "slow tea" needs to be brewed gong fu style in a gaiwan or Yixing tea pot. There are rich tea traditions in eastern and western Europe, in the middle east, and all across the globe, and they each have different practices of enjoying tea. But in order for it to be slow tea, it needs to be brewed at the point of drinking, and it needs to be brewed and drunk with care and thought.

Slow tea, like slow food, encompasses not just the production of the tea, but also the enjoyment of it. Slow tea is not just about the tea originating in a specific garden, but it is about the person drinking the tea knowing which garden it is from, and knowing when it was harvested, and knowing a bit about what makes this tea special. And slow tea involves paying attention to how the tea tastes, and enjoying the setting and process of drinking tea, whether it's a calm, meditative tea session alone, or sharing tea with friends or family.

Most tea is somewhere in the middle:

Relative to loose-leaf tea, tea bags certainly move much farther in the direction of "fast tea", but from the vantage point of bottled or ready-to-drink teas, they are more "slow".

In summary:

The slow food movement is a social movement which promotes greater awareness of and enjoyment of food, including awareness of where food comes from, enjoyment of food, and preservation and promotion of local food cultures. Slow food can easily be applied to tea, and pushes one in the direction of single-estate, single-harvest, loose-leaf teas, brewed with care and enjoyed mindfully either in a private reflective state, or shared with friends or family.

Slow tea and RateTea:

Personally, I want to support the slow food movement and what it advocates for. One of the main motivating factors behind creating RateTea is to get people to think more about tea, in the same sort of framework that the slow food movement works. I want people to rate teas not to discover which tea is "best" in some absolute sense, but just because I want them to start thinking about how their tea tastes...a key idea with RateTea is that the ratings and reviews are tied into a database that classifies each tea by style and by region, and in one click, a person can go from a page of a specific review, or a specific tea, to an article about that style of tea, or that tea-producing region. The idea is to draw casual tea drinkers in and open the world of high-quality loose tea to them, and in doing so, get them to think more about food and drink as a whole, and hopefully, move our society in the direction of greater sustainability in the process, so that we are all healthier, happier, and more able to appreciate all our food and drink, and where it comes from.

Cultivars, Monoculture, Adaptation, and Extinction: In Tea and Elsewhere

I was inspired to write this post after reading a post by Gingko Seto of Life in Teacup, about Long Jing Cultivars. I want to start by talking about the word cultivar because it is often thrown around without being precisely defined.

In the world of horticulture and agriculture, a cultivar is a plant or collection of plants that has been recognized for certain desirable characteristics. There are some cultivars which can be grown from seed, those that come up "true to seed", but many cultivars are cloned--propagated by cuttings or grafts. In the world of tea, as with wine, cultivars are also called varietals. Whereas "variety" is a general term that can refer to a broader style of tea, varietal is a more specific term, referring to the individual plant from which the tea was grown.

In the world of tea, varietals usually refer to genetically-identified plants propagated by cutting or grafting, but there are also broad categories of tea plants that come up true to seed, such as the smaller-leaved Chinese variety, C. sinensis sinensis, and the larger-leaved Assam variety, C. sinensis assamica.

Cultivar Extinction:

Most cloned cultivars, regardless of what plant they are from, eventually go extinct for ecological reasons: because they have a fixed genetic stock, the insects, mold, and bacteria in the world around them is constantly evolving and adapting to be better able to attack the specific combination of chemicals in the one cultivar.

This is why many of the old varieties of banana and apple, enjoyed by people a few generations back, are no longer grown: various blights and pests have developed which make them infeasible to commercially cultivate.

Why do we have so many old tea cultivars?

In the world of tea, we are left with many older cultivars. Why have they not gone extinct as most of the older varieties of apple have? One reason is that the tea plant, in general, is not particularly susceptible to pests, and the plant itself is very long-lived (some individual tea trees are themselves hundreds of years old). However, there is also another contributing factor, which is that, for hundreds of years, many of these cultivars were only cultivated on a small scale; below I will explain why this has prolonged the life of tea cultivars.

Some of the most popular cultivars are actually relative newcomers, compared to the long history of the tea plant. The varietal used to produce Tie Guan Yin emerged some time in the 18th century, although I've seen some sources claiming it was later. Either way, it is possible to find individual tea plants older than this particular cultivar.

Monoculture and its Role in Cultivar Extinction:

Monoculture is the widespread planting of a single crop, like tea, over a large area. Monoculture is widespread in tea cultivation, and is the norm for most commercial tea production, which is unfortunate for a variety of reasons. A long while ago, I wrote an extensive post about tea monoculture and monoculture in general which explains a number of negative impacts that monoculture has both on human agriculture and the surrounding ecology.

One of the main negative impacts of monoculture is that it facilitates pest and disease spreading. With no other plants to function as barriers or buffers, once a pest or disease gets established, it can rapidly spread through the whole crop. And with such a huge reservoir of a host plant, the pest or disease can quickly evolve and adapt by establishing a healthy, genetically diverse population of its own. Just as in my last post about the value of diversity, I explained how diversity is an essential ingredient in ecosystems. When two populations are competing in some ecological sense, the more diverse one typically wins the battle.

An extreme form of monoculture is the widespread planting of a single cultivar or varietal, over a broad area. When a single cultivar is grown in monoculture, the evolutionary pressure for pests and diseases to evolve or adapt to the particular cultivar or varietal is very strong. The pest or disease forms a huge, genetically-diverse population, but the crop being cultivated has no diversity, zero, as it all comes from a single plant that has been cloned, propagated by cuttings or grafts.

This is what causes cultivars to go extinct quickly. If a cultivar is only grown in moderation, and is grown only in small batches, mixed in with other crops, it will usually last for far longer; the risk of extinction by a pest or disease adapted specifically to that cultivar becomes minimal.

What can you do about this?

There are actually several ways you can help prevent monoculture. These tips are about tea, but they could easily be generalized to buying any type of plant-based product:

  • Pay attention to where your tea comes from, and give preference to operations that use ecologically sustainable methods. An example is Makaibari estate in Darjeeling, which leaves most of their land as intact forest and only cultivates a smaller portion of it. Seeking out the organic label is typically not enough to make the best choice; there are plenty of certified organic operations that are still monocultures, and plenty of more ecologically-friendly operations that are not organic certified.

  • Seek out and buy tea produced from different varietals. Varietals like Tie Guan Yin (to use an example) are so widely cultivated because people buy them for a high price. While it's hard to dispute that Tie Guan Yin produces amazing tea, there are numerous other cultivars that produce delicious tea as well, that go largely ignored on the global market. Try broadening your perspective: not only will you discover new teas, but you will be helping to preserve the most famous cultivars for future generations.

  • Returning to the topic of the original post that inpsired this one, which was Long Jing cultivars, don't malign or dismiss "fake" teas produced from different cultivars. For example, when tea in the style of Long Jing is produced from different cultivars, it helps to preserve and protect the original cultivars. If the original cultivars were grown on a wider scale, it would speed the development of pests and diseases targeting this cultivar, eventually leading to their extinction. These newer teas emulating an older style actually protect the "authentic" tea, rather than threatening it.

Camellia Not Sinensis, And Some Ecology

Does this look just a little bit like a tea plant?



That's because it's from the same genus, Camellia, as the tea plant, Camellia sinensis. I found this plant growing in a garden in west Philadelphia. Since I do not live in an area where the tea plant grows (and certainly not where it is native), I cannot say much firsthand about the ecological relationships involving the tea plant. However, much about ecology is fairly universal: the same relationships play out on different continents and different regions with different species playing more or less similar roles.

There are some interesting lessons about ecology in this seemingly simple photograph, and they are surprisingly relevant to tea cultivation.

Why are the young leaves red, but the older leaves green?

Just as the young of humans and other animals are vulnerable and in need of protection, the young leaves of plants are most vulnerable. Soft and tender, and growing rapidly, the newest leaves are those most vulnerable to being eaten by insects and other herbivores. They also have not yet fully developed their photosynthetic apparatus, to capture energy from sunlight and convert it to food or usable energy for the plant, so they risk being damaged by this high-energy radiation.

The red color in these leaves is due to pigments that is designed to absorb harmful high-frequency radiation (like ultraviolet light and blue visible light). The pigment is red in color because it reflects red light, a lower-frequency type of radiation, less likely to cause cellular damage. This cultivar may have been selected to enhance or bring out the red color, much like a copper beech has been selected for the same reasons, but the same phenomenon is frequently observable in wild plants. Go out in nature and look at plants, and you will see a number of plants that have a reddish tinge to the newly sprouted leaves, that is not evident on the older, tougher leaves. Interestingly, many of these red pigments, such as anthocynanins, function as antioxidants, just like the antioxidants in tea.

In the tea plant, Camellia sinensis, caffeine is manufactured as a method to protect the plant against being eaten by insects. Large animals like humans can metabolize the caffeine, which is essentially a poison, but smaller animals like insects cannot, as it is too cumbersome to manufacture and carry all the enzymes necessary to metabolize caffeine and all the other chemicals the insect may be exposed to. This explains why tippy teas tend to be more caffeinated. This phenomenon also explains why many insects are specialized, eating only specific plants, whereas large herbivores like deer or elephants, eat a larger variety of plants.

Why are there ants on the leaves?

Let's take a closer look at the ants on these Camellia leaves:



These ants are tending aphids, small insects that feed off plant juices. The aphids exude a honey-like substance which the ants eat. In exchange, the ants protect the aphids from predators, and carry them for larger distances than they could easily walk. This is an example of symbiosis, a relationship that benefits both species.

Are they conspiring to exploit the plant? Not at all. Notice that the plant in this picture looks very healthy, and shows no evidence of any damage to its leaves. I have gardened for years, and observed this ant-aphid pairing on numerous plants, and I noticed that the ants not only tend the aphids, but they protect the plant from other herbivores. When ants and aphids take over a new plant, the ants clear out caterpillars and other critters feeding on the plant. The aphids only feed near the tip of the plant, on the tender, new leaves, and the strong ant presence here deters other herbivores from the part of the plant that is most vulnerable. The relationship benefits all three species, and is an example of a form of mutualism that involves more than just two species.

I have also noticed that aphid infestations are more likely to kill indoor plants, where there are no ants, whereas I have never seen them kill an outdoor plant; I can't help but wonder if the ants help to keep the aphid population at the optimum level for the plant's health.

What does this say about tea cultivation, and agriculture in general?

People often see insects on a plant, and think "it's an infestation, there's a problem", but this is not necessarily true. In some cases, having insects on a plant can be beneficial. Our modern agriculture has relied on brute-force "pest control" methods which destroy not only all the insects and other small animals around a plant, but often have other negative ecological impacts as well.

Tea was successfully cultivated without the use of any synthetic chemicals, for hundreds of years. Tea was discovered as a beverage, and tea cultivation was developed into a complex art, long before modern organic chemistry. Synthetic chemicals are not necessary to grow tea, and in fact, not necessary to eat any of the food crops that are part of the rich, older traditions of plant cultivation.

I would like to invite people to think more about ecological relationships in all aspects of your life. Look for them, and you will see them all around you. Even if you live in a city, you can see ecology all around you, in the relationships between the plants growing up in cracks in the sidewalk, the insects that eat them, and the birds that eat those insects. Ultimately, the more aware we are of ecology and how ecosystems work, the more likely we will be to make responsible choices and decisions that will lead to a sustainable future for all of us.

Sage Tea made like Black Tea

This post and the preceding post have inspired a new post on Teacology: Oxidizing Herbs Like Black Tea or Oolong Tea.

My last post was about oxidizing herbs usually used in herb teas, in a manner similar to that used to produce black or oolong tea or red rooibos.

I made another successful batch the other night, this time out of sage (Salvia officinalis). I've had sage tea before but it is very strong and intense in aroma, and yet thin in body. I wanted to see if I could take the edge off the tea and develop it into something richer, more complex, and more mellow.

The production process:

1. Let the leaves partially wither (about 24 hours in a dark, dry area)
2. Roll the leaves to heavily and thoroughly bruise them.
3. Place them on a ceramic plate under a moist cloth
4. Let them sit for about 6 hours.

The leaves turned completely black by this point. Then the final step:

5. Heating for 5 minutes at 225 degrees in the toaster oven.

The result? An herbal tea that brews a light brown color, and has an aroma much like gingerbread cookies. There's a fair amount of toastiness (perhaps I'll go lighter on the final heating next time) and a pleasant suggestion of sage in the aftertaste, but the strong sage aroma does not dominate as it does with the fresh or plain dried leaf. The aroma is much more complex and multifaceted than that of straight sage tea. I think this is my most successful attempt at oxidizing herbs yet! I am going to work on refining this process and see where it takes me.

Oxidizing Herbs like Black or Oolong Tea

This post and its follow-up have inspired a new post on Teacology: Oxidizing Herbs Like Black Tea or Oolong Tea.

I've read a lot about the tea production process in the course of researching tea for writing the material on RateTea. One basic thing that people learn when they start learning about tea is that black tea is oxidized whereas green and white tea is not. Oolong tea is "partially oxidized", placing it somewhere between green and black teas.

One thing that comes out when you start researching teas and herbal teas is that the process of oxidizing leaves before brewing tea is not something limited to the tea plant (Camellia sinensis). A similar process is also used to process Rooibos and Honeybush tea. The process doesn't exactly work the same way (rooibos and honeybush is collected and placed to oxidize in heaps, from what I've read, whereas the tea plant is oxidized in a more controlled environment, indoors).

The New Idea:

I thought...why not try a similar process with herbs? My family and I already grow and dry a variety of herbs for tea, including spearmint, peppermint, lemon balm, sage, orange mint, and wild bergamot/bee-balm/oswego tea, to name a few. We have already experimented extensively with different blends, times of harvesting, and ways of drying.

A couple months ago, I began some trial runs, experimenting with different ways of oxidizing the leaves, using several different kinds of herbs. The processes are similar but can be summarized:

Gather Leaves -> (optional and variable) Let them wither/dry partially --> Crush / Bruise the leaves --> Place them in a cool, moist place and let them sit --> heat to stop the oxidation

I placed the teas on ceramic plates to oxidize, covered by a moist cloth. The leaves generally turn a black color, much like black tea. I heated them in a toaster oven at a low temperature, just above boiling point. I tried varying the time of oxidation, the moisture, and the time and temperature of heating.

Results:


The results were mixed...some were definitely better than others, but overall they were surprisingly good. Most of the teas resembled oolongs more than black teas in their level of oxidation, suggesting that perhaps I need more thorough bruising of the leaves or a longer oxidation time. The best result by far, and the one that most resembled black tea was one I obtained by gathering lemon balm, rolling the leaves to bruise them heavily, and then placing them overnight in a cool, moist place.

The flavor of this new tea was complex and hard to describe. Surprisingly, the brewed tea had a more vegetal aroma than tea made from normal dried lemon balm. The aroma also had a few floral tones totally absent from normal lemon balm, and a hint of toastiness. The lemon aroma was diminished slightly but remained fairly strong. The leaf infused more quickly, and brewed a much darker color (but not as dark as black tea).

I look forward in continuing my adventures in oxidized herbal teas. I also had decent results using apple mint and wild bergamot. I'm currently working on some sage and I'm going to see how that comes out and will post updates here! I would encourage others to experiment with oxidizing herbs for tea too!
